
It’s Persimmon Season!
When my parent’s purchased our family home, it came with a large persimmon tree in the front yard! There is something so special about being able to pick fruits off the tree in due season, and this tree was no exception. Come November, we were surprised with the cutest squat orange fruits, and having never tried persimmons before, we were in for a treat!
What Do Persimmons Taste Like?
So what do persimmons taste like? The persimmons that grow on our tree are Fuyu persimmons & have a crispness to them when bitten into. I like to think of them as a cross between a pumpkin and an apple, but with a subtle sweet flavor of honey and cinnamon! Typically, Fuyu’s are great eaten as is or chopped and thrown into a salad. However, this fall I decided to soften them up by boiling them and whipping them into a puree to make persimmon bread!

And not only do they have a wonderful subtle sweet flavor, but with a little research I learned that persimmons are packed with antioxidants and nutrients including vitamins A & C! According to the American Heart Association, they are low in calories and high in fiber, and they promote heart health and a healthy digestive system. I love finding healthier alternatives to satisfy my sweet tooth and with their natural honey cinnamon flavor, I think they make the perfect fruit to bake with during the BER months!

Skinny Persimmon Oat bread
For this persimmon bread recipe I swap out regular flour for oat flour. Oats are a complex carb that are packed with added nutrients, are a good source of soluble fiber, and can help regulate blood sugar. Mixed with the persimmon puree and dark chocolate chips, you get a health conscious and indulgent autumnal loaf that pairs perfectly with a hot cup of chai tea!

Step 1: Boil Your Persimmons
Since Fuyu persimmons are more crisp and can be eaten like apples, I boiled mine for 30 minutes to soften them up for baking!

Step 2: Puree
Once boiled, I removed the stem and seeds, and threw them into the food processor to make a puree.

Step 3: Mix & Bake
Lastly, I mixed the puree with the dry ingredients in one bowl until combined and added dark chocolate chips for a bit of extra sweetness. Throw them in the oven at 350 degrees for 30 minutes and enjoy!

- 5 boiled Fuyu persimmons
- 1/4 cup of zero calorie sweetener of your choice
- 2 cups of oat flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 teaspoon of ground cinnamon
- 1/4 cup of mini chocolate chips and extra for the top
